Last night when we got home it was pretty late. I would have been content with a couple glasses of wine and my bed but I have kids and they like to eat. I needed to throw together something fast and easy. Looking in the fridge I had some leftover chicken that I roasted earlier in the week. I also had some leftover cooked white rice from Taco Tuesday. I normally always have frozen broccoli and cheese around. Seems easy enough to make a cheesy chicken and broccoli casserole!
Turns out it was super simple and turned out awesome! If you would like to watch the videos I made while I was putting this together they are up on my Facebook page.
So I shredded up the chicken and put it in a bowl. Then I added the rice and the frozen broccoli.
From the pantry I used a can of Simple Truth Cream of Mushroom soup. I put it in a pot with some milk and stirred over medium heat until it was all combined. Then I added the cheese. You are going to want to add enough milk so that this is a sauce consistency. Not too runny and not to thick.
Once this is hot pour it over your chicken, rice, and broccoli and stir to combine. Then dump it all into a casserole dish.
Crush up some crackers and mix them with some melted butter so that they are coated. Then spread this out over the casserole mixture.
Bake at 350 degrees for 30 minutes. Enjoy!
