Spaghetti & Meatballs In Hidden Veggie Pasta Sauce

Sunday night is normally spaghetti and meatball night in our house. It is an easy meal that my kids like and I can pack the leftovers for their lunches on Monday. That really makes things easy for me. I take a few shortcuts when it comes to preparing this meal; it is definitely not something that I slave over. I don’t have time for something like that, especially on a Sunday. Sundays are normally meal prepping, laundry, and whatever else didn’t get done on Saturday.

I use ground turkey for the meatballs. I normally buy the regular turkey, not extra lean but that is all they had this time. To help keep these meatballs moist I added a little half and half to the milk that I use to soak the breadcrumbs. They turned out awesome!

My sauce is the Hidden Veggie Pasta Sauce recipe I make but without the meat and instead I simmer meatballs in the sauce until they are cooked through. This recipe is pretty simple and tastes amazing. I start by getting my sauce in the pan. I add one jar of pasta sauce (put a little stock or water in the jar and shake to get every little bit out), 1 can of tomato sauce or diced tomatoes, and 2 pouches of Gerber Organic Broccoli, Zucchini, and Carrot blend (available here). Stir this up and then bring it to a strong simmer. Then turn it down to low.

Next I get out a small bowl and put about ½ cup of panko bread crumbs in with 1 teaspoon each of granulated garlic, onion, basil, oregano, and salt.

Then I pour in about ¼ cup milk, just enough to cover the bread crumbs, give it a stir, and set this aside. The bread crumbs will soak up all the milk and help keep your meatballs moist.

Then I cut open the package that the turkey comes in, crack an egg on top and then dump in the breadcrumb mixture. Mix everything up until it is evenly distributed and start rolling up meatballs.

As you are rolling these up gently drop them in the pan. When they are all in put the lid on and let them simmer for 15 minutes.

Then turn each one over and let simmer for another 15 minutes or until they are cooked through.

Serve on top of some spaghetti cooked to package directions and enjoy! These are super tasty.

 

Ingredients

1 lb ground turkey

1/2 cup panko

1 tsp granulated garlic

1 tsp granulated onion

1 tsp dried basil

1 tsp dried oregano

1 tsp salt

1/4  – 1/2 cup whole milk

1 egg

Get your hidden veggie pasta sauce in the pan on a low simmer. Mix all the meatball ingredients until evenly distributed and roll into balls. Gently place meatballs into the sauce and let simmer for about 15 minutes. Turn them over and continue to simmer on low heat for another 15 minutes or until cooked through. Serve over your favorite pasta. Enjoy!!
