Heart Healthy Avocado Breakfast Toast

Hey there! I hope you are all doing well and are enjoying the holidays. I am off work the week between Christmas and New Years so I have a little time to make myself an actual breakfast this week. Although, this is something that is put together really quickly so it could be enjoyed any time.

This recipe includes mashed avocado, turmeric, golden flax, and nutritional yeast. Avocado is a healthy fat and it tastes great! I love avocado on practically anything. I could eat a bowl of guacamole and chips as a meal. It is so good. Anyway, avocados contain 20 different vitamins and minerals, they have more potassium than bananas, contain lots of heart healthy monounsaturated fatty acids, and they have lots of fiber. Bottom line is avocados are good for you and taste awesome!

 

Turmeric contains compounds with powerful medicinal properties. Unfortunately just adding turmeric to your food will not provide you with the many health benefits this spice has to offer. If you really want to take advantage of this medicinal spice you should try taking an extract supplement. Some of these benefits include being an anti-inflammatory, increasing the antioxidant capacity of the body, improving brain function, and it can even prevent cancer and heart disease.

 

Flax seeds are awesome. They contain heart healthy omega-3s, and fiber. Consuming flax seeds may reduce the risk of certain types of cancer, heart disease, and lung disease.

 

I love nutritional yeast. It has a slightly cheesy flavor and is chock full of B vitamins, amino acids, and key minerals. This stuff is yummy and good for you.

 

To make this recipe you simply toast a slice of your favorite multi-grain bread. I really love this Sweet Baby Grains multi-grain bread. It is delicious.

 

Then mash up some avocado. I normally use about half of a large avocado. Add to this about 1/4 teaspoon turmeric, 1 teaspoon ground flax, 1 teaspoon nutritional yeast, and a sprinkle of crushed red pepper.

 

I like my eggs over medium. Normally I prick the yolk and let the egg cook until the white is set. Then I flip it and let it cook for just another minute. Also, I recommend pasture raised eggs but you can use what you like. You can make your egg any way you like, I have had this with scrambled eggs and it was really good.

 

Once the toast is toasted, spread your avocado mix over top, then place the egg on top of that and enjoy!
