Hidden Veggie Pasta Sauce

I have finally gotten around to taking pictures of this hidden veggie pasta sauce! I made it once, took the pictures while I was cooking and then was so hungry that I forgot to take the pictures of the finished product. An empty plate is not so great to photograph.

So here it is, this recipe falls along the same idea of my Insanely Easy Hidden Veggie Mac & Cheese. I use pouches of organic baby food to sneak some veggies in this sauce. You would NEVER know its in there. Another plus is that this is SUPER simple. This is like a weeknight pasta sauce, not a simmer all day pasta sauce. I have a different recipe for that.

Keep in mind this recipe can be switched up to include meat or to not. I like to use ground beef or turkey, sometimes I make meatballs and let them simmer in the sauce. That is also a hit around here. Pasta is ALWAYS a hit around here, my kids love it!

Hidden Veggie Pasta Sauce

All you need for this is a can of diced tomatoes, a jar of your favorite pasta sauce, and 2 pouches of Gerber Organic Carrot, Zucchini, and Broccoli blend. I used to buy these at Kroger along with the Sweet Potato, Pumpkin, and Squash blend that I use in myΒ mac and cheese and my healthy freezer friendly pancakes but they have not had them lately so I just started ordering packs of them from Amazon. Much easier!

Hidden Veggie Pasta Sauce

If you are using ground meat start by browning it up in the pan. Once it is browned, add the can of diced tomatoes, the jar of your favorite sauce (I add a little broth to the jar and shake it up to get it all and then dump that in the pan too), and the pouches. Stir until well incorporated and let simmer for at least 20 minutes. Serve over your noodles of choice (cooked to package directions). ENJOY!!

Ingredients

2 Organic Broccoli, Carrot, and Zucchini Pouches

1 Jar of your favorite pasta sauce (I use Simple Truth Organic or Muir Glen Pasta Sauce)

1/4 cup organic chicken stock

1 can organic diced tomatoes

1 lb organic ground beef or turkey (optional)

Heat a large sauce pan over medium high heat. If using ground meat put a little avocado or coconut oil in the pan so it doesn’t stick. Break up the meat and allow it to brown. Add a touch of salt. Once the meat is browned add the canned tomatoes. Next pour in the jar of sauce. Add the stock to the empty jar, put the lid on it and shake it up. Pour that into your pan. Then add the 2 pouches and stir until everything is incorporated. Turn down the heat and let it simmer for at least 20 minutes. Serve over spaghetti noodles or any noodle of your choice (cooked to package directions).
