Easy Breakfast Burritos (Freezer Friendly)

eggsWhen I went back to work I found that eating breakfast became a real pain in the ass. Any extra time in the morning easily drifts away when my daughter spills her apple juice all over the table, or my dog won’t come in the house, or I can’t find my keys…it seems like there is always something holding me up in the morning.

I try to give myself enough time to get up before everyone else and get myself ready but I never give my self enough time to sit down, enjoy my coffee and have a nice breakfast! I mean seriously, I would be waking up at 4:30 am and who wants to do that?! My husband also loves these so when I have them on hand he has one less excuse to get breakfast from a drive thru. It drives me crazy when he does that!! So this also helps cut down on that.

I like to make these easy breakfast burritos on the weekend and throw them in the freezer. They are SO DELICIOUS and very easy to put together. Also, I can just grab one and throw it in my bag when I’m headed out the door. When I get to work I unwrap it, put it on a paper plate and throw it in the microwave for about 2 – 2 1/2 minutes. Then I get to sit down, start going through my emails, enjoy my coffee and my breakfast. LIVING. THE. DREAM.

To make these burritos you need at least a 6 pack of tortillas. I like the Simple Truth Organic tortillas from Kroger. They work wonderfully for this butcooking-veggies you can use any tortilla you like. Also, the veggies can be mixed up to whatever you have around. When I made these last I had some diced peppers, chopped broccoli, a little hot pepper, onion, cabbage, and kale. Just dice everything up nice and small. Then I throw it all in a frying pan with some coconut oil and saute until it starts to get some color. Make sure the veggies are tender but not mushy. Season it up with a little salt and pepper and then set aside in a bowl to cool. In the same pan throw in some ground turkey, or beans if you want to keep this vegetarian. You could even skip the beans and just use the veggies. It’s totally up to you, this is your breakfast so make it how you like it. I like it with ground turkey, veggies and cheese so that is where this is headed. While your turkey is browning crack your eggs into a bowl and then whisk them up. Pour the scrambled eggs into the pan with the turkey and cook, stirring occasionally until they are no longer runny. Season it up with a little salt and pepper and then sprinkle cheese over top and fold it in.


rolling-burritosIn order for this to work your tortillas need to be nice and warm so they are soft and pliable. I have this cool “tortilla oven” that warms them in the microwave and then keeps them warm for up to an hour once you take it out. It works perfectly for this. So while your filling is cooling, throw the tortillas in the microwave and set up the prep plate. You will need a dinner plate and a roll of plastic wrap. Get a nice long piece of plastic wrap and lay it over the plate. It should extend out pretty far past the edge of the plate. You need it to be long enough to wrap up the burrito nice and tight. Next, take a warm tortilla and place on the plastic wrap that is over the plate. Then take some of your egg and turkey filling and put it on top of the tortilla. Next add some of your veggie mix on top. Then roll up your burrito and make sure to tuck the edges in while you are rolling it up so all the filling does not fall out. Once it is rolled up take the plastic wrap and roll it up again, making sure to tuck in the edges. Then VOILA! You have a delicious breakfast burrito ready to toss in the freezer. 1/2 LB ground turkey (could sub for beans)

1 can of black beans (optional)

3-4 cups of veggies of your choice (small dice)

8-10 pasture raised eggs

6 pack of tortillas

1/2 cup shredded cheese

coconut oil

sea salt and pepper to taste

Heat 1-2 tablespoons coconut oil over medium high heat in a large frying pan. Add the chopped veggies and season with salt and pepper (just a pinch). Saute until tender, remove from pan, set aside to cool.

To the same pan add the ground turkey and season with salt and pepper (just a pinch). While the turkey is browning crack the eggs into a large bowl and whisk until well scrambled.

When the turkey is almost done add the eggs to the pan and stir occasionally until no longer runny. Sprinkle the cheese over the top and then fold in.

Warm your tortillas in the microwave. Cover a dinner plate with a layer of plastic wrap, make sure it extends past the plate so you have plenty to roll up the burrito.

Place a warm tortilla on the plastic wrap. Add about 1/2 cup of turkey and egg filling to the top of the tortilla. Put about 1/4 to 1/2 cup of the cooked veggies on top of the egg and turkey filling. Then wrap up the tortilla nice and tight. Make sure to tuck in the edges so the filling does not fall out.

Next roll up the burrito in the plastic wrap, again tucking in the edges and keeping it nice and tight. Repeat until you are out of filling or tortillas or both. This should make about 6 burritos. You could double this up and make a whole bunch. Keep the burritos in the freezer until you are ready to eat. Warm in the microwave for about 1 minute on each side. Make sure it is hot all the way through as microwave ovens vary. Enjoy!
